Ingredients:

  • 1 ripe banana

  • 1 tablespoon chia seeds
  • 1 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 1/2 cup milk (dairy or plant-based)
  • 1 egg (or flaxseed egg for a vegan option)
  • Optional: toppings such as berries, sliced banana, nut butter, or Greek yogurt

Instructions:

  1. Begin by blending the oats in a food processor or blender until they form a fine flour-like consistency.
  2. In a mixing bowl, mash the ripe banana until smooth. Add in the oat flour, protein powder, chia seeds, baking powder, and cinnamon. Stir until well combined.
  3. In a separate bowl, whisk together the milk and egg (or flaxseed egg).
  4. Gradually pour the wet ingredients into the dry ingredients, stirring until a smooth batter forms. If the batter is too thick, you can add a little more milk to reach your desired consistency.
  5. Heat a non-stick skillet or griddle over medium heat and lightly coat it with cooking spray or oil.
