Carrot Cake Protein Balls

 These Carrot Cake Protein Balls are great little treats to have around as they provide some protein, fiber, healthy fats and vegetables!

 

INGREDIENTS

  • Heaping 1/3 cup Medjool dates
  • 1 cup oats
  • 1/2 cup vanilla protein powder 
  • 1 cup walnuts
  • 2/3 cup carrots peeled and shredded
  • 1/3 cup almond butter
  • 1/2 tsp cinnamon
  • 1/4 cup water added in increments

INSTRUCTIONS

  • In a food processor or high-speed blender, pulse all of the ingredients (except water) together until well combined.
  • Add in the water 1-2 tbsp at a time until you achieve desired consistency.
  • Roll the batter into balls and place in an airtight container. Store in the fridge for 5-7 days or in the freezer for up to 3 months. Enjoy!

NOTES

*If using oats instead of vanilla protein powder, add 1 tsp of vanilla extract to achieve the doughy flavour.
